No Bake Chocolate Cookies? Yes, Please!

You guys, our girl-dog {a name Zachary often calls her} is sick. :( She has the stomach flu. 
I will spare you all the nasty details but yesterday morning when we found pools of blood in the house, we knew it was time to take her to the vet. 
Thankfully, the Xray showed that nothing was inside her stomach.
{Surprising actually. That dog eats so much random stuff! I thought for sure she'd have something in there.}
 But she does have a stomach infection. 
{Same as me this week! Crazy. Can we pass that to one another?} 

So, a few shots & antibiotics the next few days should put her on the road to recover. 
The medicine makes her all loopy. Last night she kept walking circles around the house, sniffing the most random stuff, and held a wagging tongue, blank stare all night. 

We are praising God that the vet visit, X rays, shots and antibiotics was all only $80. 
So thankful to have access to cheap medical care for the whole family!

How fun is meeting new friends, getting new cookie recipes and being forced to eat make them?

The fantastic Meg sent me not one, but two, delicious cookie recipes! {I only made one though.} Both of them were no bake recipes, too. Bonus! Less work and less waiting to consume them. 

You should probably check out Meg's blog, Sweet Twist of Blogging, like NOW. Because she has 12 days of cookie recipes over there, as well as, TONS of amazing, looking recipes! These and this look particularly tempting to me! 

I had tried these no bake cookies before but never with coconut! I loved the addition! 
I also added chopped pecans to give them an Almond Joy feel. 
They were delish & sooo easy! 

No Bake Chocolate Balls
1 1/2 cups white sugar       
6 tbsp cocoa                   
1/2 cup milk                      
1/2 cup unsalted butter    
1 tsp vanilla
pinch of salt

Combine above ingredients in a heavy saucepan, bring slowly to a boil, stirring constantly until all sugar is dissolved.

3 cup quick oats
1 cup or so unsweetened coconut
*1/2-1 cup nuts

Remove from heat and add Oats, coconut. 
Drop by teaspoon or shape into balls and place on to waxed/parchment paper. Cool in fridge to set. 

*My addition.

Meg says, " PS sometimes we add peanut butter to the above recipe, about 1/2 cup would do.   Just add it with the milk and butter.   You made need to add in a few more oats if you do this. "

A cookie recipe swap....what a great idea! I'm always looking for new recipes.

Maybe it's just me, but the Doug's stomach virus and the first photo of you holding the cookie...not such a good combo :) Hope all feel better soon!
