Cooking with the Mosby's: Pad Thai

Are you ready to cook probably one of the most delicious Pad Thai's ever? No seriously, it's that good. I'm not bragging or anything, as this is not my recipe, and was entirely created in Thailand. Pad Thai, fried noodles Thai style, is surprisingly incredibly easy to make with very basic ingredients that can be found in most grocery stores. So, really, there's no excuse to not make this deliciousness! Really, why am I not making this every night?!
Serves 2
About 10 minutes
200 g rice noodles****
100 g sliced chicken
4 tbs cooking oil
100 g bean sprouts & chives
2 eggs
2 tsp dried baby shrimp (optional)
2 tbs garlic
60 g hard tofu
10 tbs water
4 tbs oyster sauce
2 tbs fish sauce
4 tsp sugar
2 tsp soya sauce
2 tsp black soya sauce
Peanuts, lime juice, sugar and extra bean sprouts for topping
****A lower calorie, delicious alternative is to nix the noodles. I often ordered Pad Thai noodle-less in Thailand & loved it! Up your bean sprouts for extra crunch!
Prepare ingredients on a plate like below (pictures shows 1 serving).
Chop hard tofu in 1 cm cubes and sprinkle dried shrimp on top place in one pile.
Cut bean sprouts & green onions in one inch pieces and place in a separate pile on the plate.
Slice chicken into small pieces & smash garlic with the side of your knife. Place in a separate bowl.
Have noodles measured & eggs ready.
Heat oil in a wok and fry the garlic, chicken, tofu and dried shrimp together until the chicken is almost cooked through. About 1 to 2 minutes.
Add the eggs and keep stirring until the eggs are completely cooked.
Add water, fish sauce, oyster sauce, sugar, soya sauce and black soya sauce.
Add noodles & continue stirring until noodles are soft.
Turn off gas. Serve on a plate & top with peanuts, lime juice, sugar & extra bean sprouts for topping.
 Enjoy!
And just like that, 5 to 10 minutes tops, you have a delicious Pad Thai. Make it! You won't be disappointed!
